HAPPY MEMORIAL DAY!!



Here in the south, Memorial Day signifies the first day of summer. If you mark your calendar by what the mercury on the themometer reads, it's actually been summer for a few weeks already!!


I LOVE summer!! I LOVE everything about it. Backyard barbecues, fresh-squeezed lemonade (see recipe below), longer days, swimming holes, catching fireflies, the beach, homemade ice cream, the lake, walking barefoot......I could go on and on.


The time just seems to slow down a bit in summer.




Don't forget Memorial Day is also a time to give thanks to all the brave men and women in the armed forces, past and present, who have fought and paid the ultimate price for our country. Your service has not gone unnoticed.

FRESH-SQUEEZED LEMONADE
makes 8 cups




1 1/2 cups sugar

1/2 cup boiling water

1 tablespoon grated lemon rind

1 1/2 cups fresh lemon juice (8 large lemons)

5 cups water



Stir together sugar and 1/2 cup boiling water until sugar dissolves. Stir in lemon rind, lemon juice, and 5 cups water. Chill. Serve over ice.
